Quinoa Paella

Ingredients

  • 350g. of Quinoa
  • 1 spring onion
  • 1 clove of garlic
  • 50g. Natural chopped tomato
  • 1 small red pepper
  • 4 flat green beans
  • 1 handful of peas
  • 12 Prawns
  • 200g. of Squid
  • 1 handful of Clams
  • 8 Mussels
  • 1l. of fish broth
  • Saffron
  • Parsley
  • fresh thyme
  • Lemon
  • Extra virgin olive oil
  • Salt

Modo de preparación

Start by washing the quinoa very well until the tap water stops coming out cloudy, and drain well. Chop the spring onion, garlic and pepper, and chop the green beans and squid or cuttlefish. Heat a little oil in a casserole, large frying pan or paella and briefly brown the prawns with the squid; Clean the mussels and open them in a saucepan with water over the heat. Reserve everything separately.

In the same paella, sauté the chives with the garlic clove, add the pepper and tomato, and cook for a few minutes. Add the quinoa and a pinch of salt, stirring well so that it begins to acquire aroma, the peas and the beans. Cover with the broth, add the saffron and cook covered for about 10-12 minutes.

Add the clams, cook for about 5 minutes and add the rest of the seafood, monitoring the liquid level and controlling the heat. Cook for about 5 more minutes and let it rest a little, covered, before serving with parsley, thyme and lemon (to taste).

What to accompany quinoa paella with?

Quinoa paella is no more difficult than using good ingredients to give it flavor and control the cooking point. It does not behave the same as rice, so we have to watch the texture that we like the most, since there are supporters of a more honeyed quinoa and others prefer it drier. You can cook your family paella recipe to your liking, changing the seafood, adding fish or preparing it with meat or just vegetables. And I repeat in case it is not clear: quinoa paella is not intended to replace rice in any case, but there is nothing wrong with experimenting and trying new things in the kitchen.
