Quinoa Soup

Today you will learn how to prepare a delicious and nutritious dish: QUINOA SOUP (CHUPE DE QUINUA)

Ingredients

  • ¼ kilo of quinoa.
  • 2 split corn.
  • 4 yellow potatoes.
  • ¼ kilo of beans.
  • 150 gr of fresh cheese.
  • 3 liters of water.
  • 2 sprigs of chopped celery.
  • ½ chopped leek.
  • 4 eggs.
  • 1 tbsp. of evaporated milk.
  • 1 small red onion.
  • Garlic, yellow chili pepper, oregano and salt.



Preparation Method

  • Cook the quinoa.
  • In a pot, fry the onion, add the garlic and let it brown.
  • Add the yellow chili, oregano, salt, pepper and let cook for 5 minutes.
  • Add the quinoa, the corn pieces, the beans, the finely chopped celery and leeks, the huacatay branch and, finally, the water.
  • Let boil for 20 minutes.
  • Then add the cut potatoes, the chopped huacatay leaves and let it cook.
  • Add the cut cheese, evaporated milk and eggs.

    PREPARATION TIME: 2 HOURS.
